The BEST Oatmeal Fudge Bars

The holiday season may be over, but the craving for cozy treats is still going strong.

These Oatmeal Fudge Bars are the perfect recipe to ease into the new year with warmth and comfort. Featuring a buttery, cinnamon-spiced oat layer on top and bottom, with a decadent chocolate fudge center, this dessert is everything you want in a winter bake.

The combination of chocolate and cinnamon is one we adore—it’s rich, indulgent, and the perfect balance of sweet & warm spices. Plus, with the addition of our Vanilla Bean Paste, every bite is infused with deep vanilla flavor that takes these bars from simple to delicious.

Ingredients

  • 1/2 cup salted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 2 teaspoons Amoretti® Vanilla Bean Paste
  • 1 egg, room temperature
  • 1 cup old fashioned oats
  • 1 cup all-purpose flour
  • 1/2 tsp cinnamon powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
For the fudge layer
  • 1/2 cup sweetened condensed milk 
  • 1/2 cup dark or semi-sweet chocolate chips
  • 1 tablespoon salted butter
  • 2 teaspons Amoretti® Vanilla Bean Paste

Directions

  1. Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper, leaving a little overhang for easy removal.
  2. In the bowl of a stand mixer, cream together the butter, granulated sugar, and brown sugar until light and fluffy, about 2–3 minutes.
  3. Add the Amoretti® Vanilla Bean Paste and egg, mixing until smooth and well combined.
  4. Then, add the oats, flour, cinnamon, baking soda and baking powder. Mix until just combined.
  5. Press 2/3 of the oat mixture evenly into the bottom of the prepared pan to create a solid base. Reserve about 1/3 cup of the oat mixture for the top layer. Set aside.
  6. In a small saucepan over low heat, combine the sweetened condensed milk, chocolate chips, and butter. Stir constantly until the mixture is completely melted and smooth.
  7. Remove the saucepan from the heat and stir in the vanilla bean paste. Cool for 5 minutes.
  8. Spread the chocolate fudge filling evenly over the base layer using a spatula.
  9. Crumble the reserved oat mixture over the top of the fudge, pressing gently for even coverage.
  10. Bake for 22–25 minutes, or until the oat topping is golden brown and set.
  11. Let the bars cool completely in the pan on a wire rack. Cut into 9 squares & serve.
