Robins Eggs
Robins Eggs are a classic spring-themed sweet dessert perfect for your Easter gathering. The rich peanut cream and white chocolate make every bite a rich, sweet, and crowd-favorite treat.
This easy, no-bake recipe makes contributing to your spring gatherings simple. Amoretti® Peanut Cream brings a creamy, nutty flavor bonded together with the Amoretti® Almond Flour and Amoretti® Vanilla Bean Paste. Coated in white chocolate and colored with Amoretti® Natural Blue Food Color, this treat is easy to make and equally as delicious.


Ingredients
For the Filling:
- 1 1/4 cup Amoretti® Roasted Peanut Cream
- 1/4 cup powdered sugar
- 1/4 cup maple syrup
- 1/3 cup Amoretti® Almond Flour
- 1 tsp Amoretti® Vanilla Bean Paste
For the Coating:
- 8-10 oz. white chocolate melting wafers
- 2 tsp coconut oil
- 1/2 tsp Amoretti® Natural Blue Food Color
For the specks:
- 1 tsp cocoa powder
- 1 tbsp water
Directions
- With a rubber spatula, gently mix peanut cream, powdered sugar, maple syrup, almond flour, and vanilla bean paste in a large mixing bowl until combines.
- Form 1-inch balls of filling into oval (egg-shaped) pieces and place on a lined baking sheet. Gently place toothpicks into the bottom of each ball and place in freezer.
- While the filling is in the freezer, add white chocolate melting wafers and coconut oil into a microwave-safe cup and microwave in 30 second intervals, stirring in-between.
- Once the white chocolate is fully melted, add blue food color and mix.
- Combine coco powder and water in a small dish and mix until combined.
- Remove egg filling from freezer and carefully dip each ball into the white chocolate mixture. Let the egg drip as long as possible to avoid excess white chocolate interfering with egg appearance.
- Using a food-safe brush, dip into cocoa powder mixture and tap off excess on the side of your dish. Gently splatter the mixture on your egg until the specks are to your liking.
- Repeat on each egg on your baking sheet.
- Store in fridge until ready to serve and enjoy!
