Red Velvet Trifles
Make this Valentine's Day unforgettably special by making these unique and delicious Red Velvet Trifles!
Ingredients
RED VELVET CAKE- 2½ cup all purpose flour
- ¾ tsp baking soda
- ¾ tsp salt
- 1½ tsp cocoa powder
- 2 eggs
- 1½ cups + 2 tbsp sugar
- 1 cup vegetable oil
- 1 tsp Amoretti® Vanilla Madagascar Bourbon W.S. 20X
- 1 cup buttermilk
- 1 tsp white vinegar
- 1 tbsp red food color
- ⅓ cup Amoretti® Natural Red Velvet Artisan
- 1 – 8 oz. package cream cheese, room temperature
- ½ cup (1 stick) butter, room temperature
- 1 cup powdered sugar
- 1 tsp Amoretti® Vanilla Madagascar Bourbon W.S. 20X, optional
- 1 tsp powdered gelatin
- 4 tsp water
- 2 cups cream
- ⅔ cup chopped white chocolate
- 1 vanilla bean, scraped
- red velvet cake crumbs
- white candy pearls
- pink sugar crystals or tiny candy pearls
- white chocolate decorations (see TIPS)
- small trifle dishes
- piping bags
Directions
RED VELVET CAKE- Preheat oven to 350°F.
- Spray and line a half sheet pan or 2 – ¼ sheet pans with parchment paper. Lightly spray parchment and set aside.
- Sift together dry ingredients, set aside.
- Whip eggs and sugar until light and fluffy.
- Add oil and Madagascar Bourbon Vanilla. Mix just to combine.
- Alternate adding dry ingredients and buttermilk.
- Scrape the bowl and mix again.
- Add vinegar, mix just to combine.
- Add food color and Red Velvet Artisan.
- Scrape bowl and finish combining batter by hand, to prevent overmixing the batter.
- Pour batter into sheet pan(s) and bake for approximately 55 minutes or until a skewer inserted in the center comes out clean.
- Cool completely before removing from pan(s). At this point you can wrap the cakes and chill overnight.
- Whip cream cheese until smooth.
- Add butter and mix.
- Scrape the bowl and add powdered sugar and Madagascar Bourbon Vanilla, if using.
- Beat until smooth and fluffy.
- Bloom gelatin in water and set aside.
- Heat cream to simmering.
- Pour cream over white chocolate and vanilla seeds, whisk until smooth.
- Add bloomed gelatin to warm cream and whisk until combined.
- Chill 6 hours or overnight.
- Whip cream, adding food colors if desired.
- Cut cake into circles to fit the trifle dishes.
- Place one cake circle in bottom. Brush with simple syrup (see TIPS) if desired.
- Pipe a layer of Cream Cheese Filling onto the cake.
- Place another cake circle over Cream Cheese Filling.
- Pipe White Chocolate Cream on top and garnish with red velvet cake crumbs, candy pearls, colored sugar, and white chocolate decorations if desired.
- SIMPLE SYRUP To make simple syrup, combine equal amounts of sugar and water. Heat until sugar dissolves. Let cool and use as directed.
