Red Velvet Trifles

Make this Valentine's Day unforgettably special by making these unique and delicious Red Velvet Trifles!

Ingredients

RED VELVET CAKE CREAM CHEESE FILLING WHITE CHOCOLATE CREAM
  • 1 tsp powdered gelatin
  • 4 tsp water
  • 2 cups cream
  • ⅔ cup chopped white chocolate
  • 1 vanilla bean, scraped
GARNISH
  • red velvet cake crumbs
  • white candy pearls
  • pink sugar crystals or tiny candy pearls
  • white chocolate decorations (see TIPS)
SPECIAL EQUIPMENT
  • small trifle dishes
  • piping bags

Directions

RED VELVET CAKE
  1. Preheat oven to 350°F.
  2. Spray and line a half sheet pan or 2 – ¼ sheet pans with parchment paper. Lightly spray parchment and set aside.
  3. Sift together dry ingredients, set aside.
  4. Whip eggs and sugar until light and fluffy.
  5. Add oil and Madagascar Bourbon Vanilla. Mix just to combine.
  6. Alternate adding dry ingredients and buttermilk.
  7. Scrape the bowl and mix again.
  8. Add vinegar, mix just to combine.
  9. Add food color and Red Velvet Artisan.
  10. Scrape bowl and finish combining batter by hand, to prevent overmixing the batter.
  11. Pour batter into sheet pan(s) and bake for approximately 55 minutes or until a skewer inserted in the center comes out clean.
  12. Cool completely before removing from pan(s). At this point you can wrap the cakes and chill overnight.
CREAM CHEESE FILLING
  1. Whip cream cheese until smooth.
  2. Add butter and mix.
  3. Scrape the bowl and add powdered sugar and Madagascar Bourbon Vanilla, if using.
  4. Beat until smooth and fluffy.
WHITE CHOCOLATE CREAM
  1. Bloom gelatin in water and set aside.
  2. Heat cream to simmering.
  3. Pour cream over white chocolate and vanilla seeds, whisk until smooth.
  4. Add bloomed gelatin to warm cream and whisk until combined.
  5. Chill 6 hours or overnight.
  6. Whip cream, adding food colors if desired.
ASSEMBLY
  1. Cut cake into circles to fit the trifle dishes.
  2. Place one cake circle in bottom. Brush with simple syrup (see TIPS) if desired.
  3. Pipe a layer of Cream Cheese Filling onto the cake.
  4. Place another cake circle over Cream Cheese Filling.
  5. Pipe White Chocolate Cream on top and garnish with red velvet cake crumbs, candy pearls, colored sugar, and white chocolate decorations if desired.
TIPS:
  • SIMPLE SYRUP To make simple syrup, combine equal amounts of sugar and water. Heat until sugar dissolves. Let cool and use as directed.
