Pumpkin Spice Cream Cheese Muffins

Directions

Muffins
  1. Preheat your oven to 375 degrees F. and line your muffin tin with baking cups.
  2. In a medium bowl whisk your flour, baking soda, and salt until well combined, then set aside. 
  3. In a large bowl whisk your pumpkin puree, sugar and brown sugar. Mix in your eggs, vegetable oil, Amoretti® Vanilla Madagascar Bourbon (2x) and Amoretti® Natural Pumpkin Spice Artisan
  4. Slowly mix in your dry ingredients until there are no lumps in the batter. Fill the muffin tins 3/4 of the way full. 
Cream Cheese Swirl
  1. In a medium bowl, beat cream cheese until smooth, then add in your sugar, egg yolk, and Amoretti® Vanilla Madagascar Bourbon (2x) and beat until completely combined. 
  2. Top each muffin with about 1 tbs. of the cream cheese mixture and use a toothpick to swirl it in to the batter.
  3. Bake your muffins for about 15-20 minutes, or until a toothpick inserted in the pumpkin part comes out clean. 
Notes
  • Make sure to use regular pumpkin puree, not pumpkin pie filling. 
  • You can store these muffins in the refrigerator in an airtight container for up to 5 days.
