Peppermint Marshmallows

Nothing says the holidays quite like the fresh, cool taste of peppermint – and what better way to enjoy it than in fluffy, homemade marshmallows swirled with a festive candy cane design?

These peppermint marshmallows, made with our Peppermint Extract, are perfect for adding a pop of holiday flavor to hot cocoa, gifting, or simply enjoying as a sweet seasonal treat.

Luckily, they're super easy to make! With just a handful of ingredients and a few simple steps, these peppermint marshmallows practically make themselves. They’re soft, airy, and boast a delicate minty flavor that captures the essence of the season in each bite. 

Ingredients

  • 3/4 cup cold water, divided
  • 3 envelopes unflavored gelatin
  • 2 cups granulated sugar
  • 1 cup light corn syrup
  • ½ tsp of Amoretti® Peppermint Extract  (¼ tsp if adding crushed candy canes)
  • 1 tbsp Amoretti® Vanilla Madagascar Bourbon 2x Extract
  • ¼ cup of crushed candy canes (optional)
  • Red gel food coloring (for candy cane swirls)
  • ¼ cup Powdered sugar (for dusting)
  • ¼ cup Cornstarch (for dusting)

Directions

  1. Line a 9x9 pan with plastic wrap and grease with non-stick cooking spray. This helps prevent the marshmallows from sticking once set.
  2. Pour 1/2 cup of the cold water into the bowl of a stand mixer and sprinkle the gelatin over it. Let it sit for 5-10 minutes to “bloom” – this will give your marshmallows the perfect texture.
  3. In a medium saucepan, combine the remaining water, granulated sugar, and corn syrup. Stir over medium heat until the sugar dissolves, then increase the heat to medium-high and cook without stirring until the mixture reaches 240°F (soft-ball stage). This will take about 8-10 minutes.
  4. With the mixer on low, slowly pour the hot syrup over the bloomed gelatin. Once incorporated, increase the speed to high and whip for 10-12 minutes, or until the mixture becomes thick, fluffy, and cools slightly. It should nearly triple in volume. Add in the Amoretti Peppermint and Vanilla extracts and mix just until incorporated.
  5. Quickly pour the mixture into your prepared pan. Drop small dots of red food coloring on top of the marshmallow mixture, then use a toothpick or skewer to swirl the red coloring to create a festive candy cane effect.
  6. Dust the top with powdered sugar and let the marshmallows sit uncovered for 4 hours or overnight to set completely.
  7. Once set, dust a knife or pizza cutter with powdered sugar and cut the marshmallows into squares. Dust all sides of each marshmallow with additional powdered sugar to prevent sticking.

     

    How to Enjoy Your Peppermint Marshmallows

    These marshmallows are perfect for dunking into hot cocoa, eating on their own.
    For optimum freshness, store in a bag or air-tight container with a little a little bit of the cornstarch & powdered sugar mixture.
