Lavender Honey Shortbread Cookies
These Lavender Honey shortbread cookies are the perfect spring-time dessert! They are buttery, delicately floral and lightly sweetened with honey. Made with only a handful of ingredients and super easy to make, these cookies are perfect to share with family/friends, make a great homemade gift (they ship very well), or to just enjoy as an afternoon treat with your tea or coffee!
These delicious cookies feature our highly concentrated and naturally flavored Violet Lavender Extract adding the perfect touch of vibrant spring flavor to any creation! The addition of honey to these cookies brings a touch of sweetness without overpowering the delicate floral flavors of the lavender and the buttery flavors of the shortbread. So get ready to delight your palate with the perfect balance in every bite!
Ingredients
- 1 cup softened butter
- 1/2 cup + 2 tbs. granulated sugar
- 1/4 tsp. salt
- 1 1/2 tsp Amoretti® Violet Lavender Extract
- 1/4 cup honey
- 2 cups + 1 tbs. flour
- 2 tsp. dried lavender + more for topping
- 1/4 cup white chocolate (melted) for topping
Directions
- Preheat your oven to 325 degrees F. and line a baking sheet with parchement paper.
- Using a hand or stand mixer, combine the sugar, butter, salt, honey and Amoretti® Violet Lavender Extract.
- Once combined add in the flour and mix until just combined.
- Gently fold in the dried lavender, then chill dough for 15 minutes in the freezer.
- Roll the dough out on a floured surface roughly 1/4 in. thick, then cut with your prefered cookie cutter.
- Bake your shortbread cookies for about 15 minutes or until edges are slightly golden. Allow to cool.
- Once cooled melt your white chocolate and drizzle on half of each cookie, topping with a sprinkle of dried lavender.
- Serve and enjoy!
