What is Brown Butter & How Do I Make It?
If you've never made brown butter, don't fret! We're here to help. Not only does brown butter make everything taste better, it's also super simple to make.
Brown butter is regular butter that's cooked until the milk solids toast and turn golden. It adds a deep, caramel-like flavor that makes these Rice Krispy treats feel more grown-up without losing the gooey, marshmallowy nostalgia.
To get the brown butter started, add your sticks of butter to a saucepan and melt them over medium heat. Once melted, continue to cook the butter, stirring frequently. You'll notice it will begin to foam, then (loudly) bubble, and finally turn golden with a nutty aroma.
Keep a close eye on it. The transformation happens quickly, and you don’t want it to burn. Once you see brown specks forming at the bottom of the pan and it smells toasty and rich, turn down or remove from the heat.

Ingredients
- 1 cup (2 sticks) unsalted european style butter (European style is best, but any butter will work)
- 2 10-ounce bags of mini marshmallows
- 2 1/2 tsp Amoretti® Vanilla Bean Paste
- 1/2 tsp of salt
- 9 cups of Rice Krispies Cereal
Directions
- Grease a 9x13 baking pan with cooking spray or butter.
- In a large pot (seriously, the biggest one you have--we used a 5 quart pot) add the two sticks of butter. Swirl occasionally.
- The butter will become foamy and audibly loud as it starts to brown. Give it a couple stirs as it begins to settle down and brown.
- Once the brown bits form, add in the marshmallows, vanilla bean paste, and salt. Stir continuously until melted.
- Remove from the heat and add the cereal. Stir until combined. Make sure to scrape all the way down to the bottom of the pot and pull up. You want the marshmallow mixture to cover the cereal evenly.
- Then, to your greased pan, transfer the mixture and spread to the 4 corners of your dish, evenly.
- Gently press your fingertips or a greased silicone spatula on top of the rice krispies until a smooth, even layer forms.
- Let them sit until completely cooled. About 1-2 hours. Trust us, it's worth the wait!
- Once set, cut into squares & serve!

Notes:
Storage: store your rice krispy treats in an air-tight container at room temperature. They'll stay soft, chewy, and delicious for 3-5 days. If they last that long!
