The sweet, tangy filling pairs perfectly with the light dough and sugary coating, creating a bakery-worthy donut that's surprisingly simple to make at home.

Dough
1. In a large mixing bowl, combine warm milk, yeast and 1 tsp. sugar. Let sit for 5-10 minutes until frothy to activate yeast.
2. Add the eggs, sugar and vanilla paste. Mix until combined.
3. Add the flour and salt, then mix until a dough forms.
4. Knead the dough while adding the softened butter cubes a little at a time until fully incorporated. Knead until the dough turns elastic.
5. Transfer to a lightly greased bowl, cover and let rise for 1-2 hours (or until the dough doubles in size).
6. Divide the dough into 12-13 pieces (about 65g each) and form into smooth, oval balls. Place on lined baking tray, cover and let rise for 30 minutes until puffy.
7. Heat oil to 350°-375°
8. Fry for 2 minutes on each side, flipping intermittently to ensure even cooking.
9. Transfer to wire rack and coat in granulated sugar after donuts are done cooking.
Filling
1. In a saucepan on medium heat, whisk together sugar, eggs, lemon juice, and lemon zest until combined.
2. Continue to whisk for 5-10 minutes until the mixture thickens.
3. Remove the pan from heat and slowly add the cubes of butter and mix until fully melted.
4. Let it cool to room temperature, add Guava Artisan, and mix.
5. Transfer to a glass jar and place in the fridge to thicken (4 hours-overnight).
6. Use a piping bag or plastic bag to fill your donuts and enjoy!
