Gluten Free Key Lime Cookies with Key Lime Glaze

Ingredients
For the Cookies:
- 1 cup of cold butter (or vegan butter)
- 1 cup of granulated sugar
- 1 egg
- 1 egg yolk
- 2 tsp Amoretti® Key Lime Extract W.S.
- 1/2 tsp Amoretti® Vanilla Madagascar Bourbon extract (2x) W.S.
- 2 1/2 cups 1 to 1 gluten free flour
- 1 tsp baking powder
- pinch of salt
For the glaze:
- 2 cups of powdered sugar (plus two tablespoons extra
- 1 tsp of Amoretti® Natural Key Lime Artisan Flavor
- Splash of key lime juice (omit and add 1/2 extra of artisan if key lime juice is unavailable)
- 2 tablespoons of almond milk (or any other non-dairy milk)
Directions
For the Cookies:
- First, preheat 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
- In the bowl of a stand mixer, add in your cold butter and sugar. Mix on high for 2 minutes, or until fluffy. If you're using vegan butter do NOT let the butter sit out for more than 5 minutes before whipping with the sugar.
- Add in egg, egg yolk, Amoretti® vanilla and key lime extract.
- Add in the remaining ingredients (flour, baking powder and sea salt) and pulse for a good minute before mixing consistently. We don't want the flour to escape the bowl and make a mass.
- Once everything is combined and the flavor is to your liking (feel free to add 1/2 tsp- tsp more of key lime if not enough) grab your large cookie scoop and place your dough balls on a lined baking sheet.
- Bake for 10-12 minutes. This recipe makes about 12-14 cookies (depending on how large of a scoop you're using) so in the interim, do not chill, freeze, or refrigerate your dough--especially if you're using vegan butter. This will result in a more browned cookie.
- Once the cookies have baked, let them cool on the cookie sheet for 1 hour.
For the Glaze:
- Combine the powdered sugar, Amoretti® Key Lime Artisan, key lime juice, and almond milk (or non-dairy milk of your choosing) in a bowl and mix with a whisk.
- To make the glaze thicker, add in just a little bit more powdered sugar as you go. A tablespoon at a time is highly recommended for best and not overly sweet results--you don't want to lose that key lime flavor.
- Once you have your glaze smooth and creamy, pour a tablespoon on each cookie. Let them sit until the glaze has hardened. You can set them in the fridge for a few minutes to help streamline this process.
- Once they've hardened, you got yourself one heck of a delicious GF Key Lime cookie
