Gluten Free and Dairy Free Coconut Key Lime Donuts

Coconut Cream and Key Lime make such a wonderful pairing in this light and fluffy donut recipe. We might be biased, but these two flavors are a match made in heaven!
Ingredients
For the Donut:
- 1 and 1/4 cups of gluten free 1 to 1 flour (Bob's Red Mill worked great)
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 granulated sugar
- 2 tsp fresh lime zest
- 2 1/2 tbsp of coconut oil (melted)
- 1 large, room temp. egg
- 1/2 cup coconut milk
- 1 tsp Amoretti® Key Lime Extract
- 2 tsp Amoretti® Coconut Cream Extract
For the Key Lime Glaze:
- 1 cup powdered sugar
- 1 and 1/2 teaspoons key lime juice
- 1/8 teaspoon salt
Decoration:
- 1 cup of coconut flakes
Directions
For the Donut:
- Preheat oven to 350 degrees (F). Generously grease a doughnut pan; set aside.

In a large bowl combine the granulated sugar and lime zest; mix together with your fingers until zest is evenly distributed in the sugar. Add in the melted coconut oil and mix until combined. Beat in the egg, then add in coconut milk.

In a small bowl whisk together flour, baking powder and salt. Gently fold the dry with the wet ingredients until mixture is evenly combined.

Divide the thick batter evenly among the molds of your prepared pan, or place in a piping back for a more streamlined process. Things may get messy.

Fill each mold up 2/3 of the way and bake for 10-11 minutes, or until firm and lightly golden on the tops.

Remove pan from oven and allow doughnuts to cool for at least 10 minutes in the tray before transferring to a cooling wrack to cool completely.
For the Key Lime Glaze:

In a wide, shallow dish combine the key lime juice, salt, and powdered sugar--whisk to combine.

If the glaze appears too thick, add a little more lime juice until desired consistency is achieved; if glaze appears too thin, add a little more confectioners' sugar until desired consistency is achieved.

Carefully dip cooled doughnuts in the glaze, and top with your coconut flakes.
- Let them harden before devouring.
- After about 15-30 minutes, feel free to enjoy!
