From Scratch Cookie Dough Cupcakes

Ingredients

Cupcakes
  • 1 cup all purpose flour
  • 1 1/4 tsp. baking powder
  • 1/8 tsp salt
  • 3/4 cup granulated sugar
  • 1/4 cup unsalted butter
  • 2 large eggs
  • 1 1/2 tsp. vegetable oil
  • 1/2 cup whole milk
  • 2 tbsp. Amoretti® Natural Vanilla Bean Artisan Flavor 
  • 1/3 cup mini chocolate chips
Cookie Dough Frosting

Directions

Cupcakes
  1. Preheat oven to 350 F and prepare a standard muffin tin with liners. 
  2. In a medium mixing bowl whisk together flour, baking powder, salt and sugar.
  3. In a separate bowl use a hand mixer to beat together butter, eggs, vegetable oil and whole milk. Scrape down sides of bowl and add Natural Vanilla Bean Artisan Paste, mix until well combined.
  4. In increments of 1/2 cup mix dry ingredients into wet until combined
  5. Fold in chocolate chips and distribute batter into muffin tin.
  6. Divide batter evenly between cupcake liners. Bake for 18-20 minutes.
Frosting
  1. Using a hand mixer beat butter until light and fluffy.
  2. Add in powdered sugar 1/2 cup at a time. Mix until well combined, scraping sides of bowl as needed. 
  3. Mix in salt and Natural Cookie Dough Artisan Flavor.
  4. Fit piping bag with desired tip and fill with icing.
  5. Top cupcakes with icing and garnish with one mini chocolate chip cookie.
