Chocolate Chip Banana Bread

Ingredients:

  • 1/2 cup unsalted butter, softened 
  • 2/3 cup granulated sugar 
  • 2-3 eggs, room temperature
  • 3 medium/large bananas (very ripe)
  • 1 tbsp Amoretti® Vanilla Bean Paste
  • 1 1/2 cups all-purpose flour 
  • 1/2 tsp salt 
  • 1 tsp baking soda
  • 1 cup mini unsweetened chocolate chips 

Directions

  1. Preheat the oven to 350°F (175°C) and grease and line an 8x4-inch loaf pan with parchment paper.
  2. In a large bowl, whisk together the softened butter and sugar until light and fluffy 
  3. In a separate bowl, beat the eggs, then stir them into the butter and sugar mixture.
  4. Mix the flour, salt, and baking soda into the same bowl until just combined.
  5. Fold in the mashed bananas and mini chocolate chips until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top. Bake at 350°F (175°C) for 55–60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
