Candy Apples 3 Ways
When it comes to classic fall treats, candy apples take the cake! These mouthwatering goodies have been a staple at state fairs, festivals and Halloween gatherings for generations! So today we are going to explore 3 different variations; Caramel Apples, Chocolate Apples and Candy Apples! The best part of this recipe is you can use whatever Amoretti Extract your heart desires! Just make sure to use an oil soluble extract if you are planning to flavor chocolate.
Ingredients
Caramel Apples
- 8-9 apples
- 1 3/4 cup heavy cream
- 1 cup light corn syrup
- 2 cups brown sugar
- 1/4 cup unsalted butter
- 1/2 tsp. salt
- 2 tsp. Amoretti Extract of choice (I used Amoretti® Natural Maple Bacon Type Extract and Amoretti® Cinnamon Extract)
- Garnishes of choice (I used bacon bits and crushed ginger snaps)
Chocolate Apples
- 8-9 apples
- 2 cups white, milk or dark chocolate of choice
- 1 tsp. Amoretti Extract of choice (I used Amoretti® Cake Batter Extract OS for white chocolate, Amoretti® Marshmallow Extract OS for milk, and Amoretti® English Toffee Extract OS for dark)
- Garnishes of choice (I used sprinkles, mini freeze dried marshmallows and chopped almonds)
Candy Apples
- 8-9 apples
- 2 cups granulated sugar
- 1/4 cup corn syrup
- 3/4 cup water
- 1/4 tsp food coloring of choice (I used red for cherry and green for sour)
- 1.5 tsp. Amoretti Extract of choice (I used Amoretti® Cherry Sweet Extract and Amoretti® Natural Sour Flavor Extract)
Directions
Caramel Apples
- Prep your apples by washing them and removing the outer layer of wax (you can either boil them for 1-2 seconds or soak them in baking soda and water for 15 minutes). Remove the stem and insert your apple stick about 3/4 down into the apple, then stick them in the fridge.
- Line a large baking sheet with a silicone baking mat or grease it with butter.
- Combine your heavy cream, corn syrup, brown sugar, butter and salt in a large sauce pan over medium heat. Stir constantly until the butter is melted.
- Once melted, brush down the sides of the pan with a moistened pastry brush to remove any sugar stuck to the sides (this will cause your whole batch to crystalize).
- Add in your candy thermometer and let the mixture cook until it reaches 240 degrees F without stirring, then remove from the heat and add in your Amoretti Extract of choice.
- Let it cool and thicken for about 5-10 minuets, then dip the apples into the caramel and swirl it around the pan to coat the apples completely.
- Add your desired toppings.
- You can eat them immediately or, if you plan to wrap them in cellophane treat bags or plastic wrap, allow caramel to set for at least 45-50 minutes.
- Enjoy!
Chocolate Apples
- Prep your apples by washing them and removing the outer layer of wax (you can either boil them for 1-2 seconds or soak them in baking soda and water for 15 minutes). Remove the stem and insert your apple stick about 3/4 down into the apple, then stick them in the fridge.
- Line a large baking sheet with a silicone baking mat or grease it with butter.
- Melt your chocolate in a microwaveable bowl in bursts of 15 seconds or use the double boiler method.
- Add in your Amoretti Extract of choice and mix until completely incorporated.
- Dip the apples into the chocolate and swirl it around the bowl to coat the apples completely.
- Add your desired toppings.
- Allow apples to set for about 20 minutes.
- Enjoy!
Candy Apples
- Prep your apples by washing them and removing the outer layer of wax (you can either boil them for 1-2 seconds or soak them in baking soda and water for 15 minutes). Remove the stem and insert your apple stick about 3/4 down into the apple, then stick them in the fridge.
- Line a large baking sheet with a silicone baking mat or grease it with butter.
- In a large sauce pan over medium high heat, stir together sugar, syrup and water.
- Bring the mixture to a boil and then add in the food coloring and Amoretti Extract of choice.
- Add in your candy thermometer and boil until the mixture reaches 310 degrees F. then remove from heat and allow to cool and thicken for 3-5 minutes.
- Dip the apples into the candy and swirl it around the pan to coat the apples completely.
- Transfer to a baking sheet and let them set for about 40-50 minutes.
- Enjoy!
