For baking, Pecan Flour is tops! While Almond Flour is noted for nutritiousness, it cannot beat FLAVOUR and moistness that Pecan Flour gives! Muffins, pancakes/waffles, breads will convince you of the unmatched goodness of Pecans. Pecan is nutritious; a great way to get natural Vitamins & minerals! Caution: don't overdo Pecan Flour in Waffles, or they may be too heavy/wet to come out of the Waffle Iron! If using Pecan Flour, DON'T USE OAT FLOUR; its hydroscopic; holding 'moisture' and being too wet to 'behave well' during cooking!
