This flavor took some getting used to. the flavor is there but you at first do not notice it then it sort of comes out on the tongue and you get that blue cheese flavor. I found this pairs great with egg dishes. I also have used it with a yogurt based savory dip to give a unique twist to it. I have yet to test with a bread recipe but being a OS I imagine it would go great. The flavor is a bit less concentrated then some of the other cheeses but it will trick you if you keep on adding, as mentioned it sort of just jumps out on your palette. I am finding starting off in small amounts and adjusting for each kind of recipe letting it sit and taste test carefully before adjusting up. I add these using a dropper and find about 15-25 drops to 2 cups of base works great. You might have to adjust down or up depending if it is your main flavor of a compliment flavor.
