I've used other almond paste for my baking, and I can tell you nothing makes a better pignoli cookie then Amoretti! The aroma, flavor and texture are Top Notch. I have friends who are constantly bugging me for the cookies, I almost need my own pine forest to provide enough nuts. My only problem, is it is a bit of a hassle toget all the paste out of the jar, but i manage!
