Whipped Vanilla Bean Ganache Frosting

Tips for Perfect Whipped Ganache

1. Use high-quality white chocolate
White chocolate bars melt more smoothly than white chocolate chips, which often contain stabilizers.

2. Don’t overheat the cream
Cream that’s too hot can cause the chocolate to separate or become grainy.

3. Make sure the ganache is fully chilled
If the ganache isn’t cold enough, it won’t whip properly.

4. Whip just until fluffy
Overwhipping can cause the ganache to become too firm.

Whipped Vanilla Bean Ganache Frosting

Ingredients

Directions

  1. Roughly chop up the white chocolate and place in a medium sized bowl.
  2. In a small pot, add the heavy cream and place on medium-low heat until just simmering. Remove from heat, do not let the cream boil!
  3. Pour the cream over top the white chocolate. Let sit for 3-5 minutes to soften. Whisk the chocolate and cream together until smooth.
  4. Cover the bowl with plastic wrap and leave in the fridge for 2-4 hours or overnight to set.
  5. Place the bowl of a stand mixer (stainless steel or glass is fine) in the freezer 30 minutes prior to whipping.
  6. Transfer the chilled ganache into the bowl of the stand mixer and with the paddle attachment, whip until light and fluffy.
  7. Add the ganache frosting to a piping bag or use an offset spatula to spread on cakes, cupcakes, and more!
