Strawberry Champagne Icebox Cake
No bottles had to be popped to make this dreamy cake! All of the bold bubbly flavor comes directly from Amoretti's Champagne Compound. This is the perfect treat to end a homemade valentines day feast.
Ingredients
- 2 - 8oz packages of mascarpone cheese
- 3.5 cups heavy whipping cream
- 3/4 cups granulated sugar
- 1 tsp Amoretti® Vanilla Madagascar Bourbon Water Soluble 2X
- 1 tbsp. Amoretti® Champagne Compound
- 1 tsp salt
- 1 tbsp. lemon juice
- 2.3 packages shortbread cookies
- 1.5 - 16 oz. packages of strawberries
- 9" spring form pan
Directions
- Slice your strawberries lengthwise and thin.
- Using a stand mixer with whisk attachment or hand mixer beat together the sugar and mascarpone cheese.
- Add in heavy cream, Vanilla Extract, Champagne Compound, salt, and lemon juice. Beat until almost stiff peaks form.
- Layer shortbread cookies in the bottom of your pan, you can crumble/break them to fit any uncovered spaces. Layer strawberries on top of the cookies and then carefully spread 1/3 of your cheese mixture on top. Repeat with 2 more layers ending with just cheese mixture. Finish with a layer of strawberries and refrigerate for 1 hour or until ready to serve.
