This recipe combines the sweet & tart beauty of raspberries, mixed with the fragrant flavor of almond. These two flavors combine to make the most delcious batch of muffins you will ever eat, seriously. We would never lead you astray.

One of the many beautiful things about this recipe is that it takes about 45 minutes to whip these muffins. Cooking time included.

Muffins are typically very simple to make.Depending on how fancy you decide to get. We've found that oftentimes, the simpler the muffin recipe, the simpler it tastes.

While these muffins are quick and easy to make, the flavor is out of this world.That's all thanks to our Almond Compound.

The Amoretti® Almond Compound adds the most delicate flavor and sweetness to match the tartness of the raspberries. 

It's a match made in heaven!

Ingredients

  • ¾ cup sugar
  • 2 eggs
  •  cup avocado oil
  • ¼ cup milk
  • 1 tablespoon Amoretti® Almond Compound
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 ¼ cups frozen raspberries if frozen, do not thaw
  • sliced almonds for topping

Directions

  1. Preheat your oven to 375° F and line your muffin tins with cupcake liners.
  2. In a bowl, whisk together the sugar, eggs, avocado oil, milk, and Amoretti® Almond Compound until thoroughly combined.
  3. In a separate bowl, combine your dry ingredients: the flour, baking powder, and salt.
  4. Add the dry ingredients to the wet ingredients and mix just until combined.
  5. Gently fold in the frozen raspberries. Do not overmix.
  6. Scoop the batter into the muffin tin lined with baking cups
  7. OPTIONAL: Add 1 teaspoon of sliced almonds to the top of each muffin, if desired.
  8. Bake the muffins for 17-20 minutes or until a toothpick comes out clean.

And voila! You have yourself the best muffins ever!

Serve these with your favorite cup of coffee or tea, or as is. They'll cover all your sweet tooth cravings!
