- Preheat oven to 350 F. Grease and parchment line a 8 x 8 baking pan.
- In a large mixing bowl whisk together butter, sugars, eggs, Hot Chocolate Extract, Peppermint Extract and Vanilla Bean Paste.
- Sift in flour, cocoa powder and salt. Mix until well until combined.
- Mix in chocolate chips and .5 cup mini marshmallows, pour into baking pan and bake for 25-30 min or until toothpick comes out clean.
- When still warm insert remainder of mini marshmallows into the top of the brownies.
- If desired, once cooled use a torch or broiler to toast the top of the marshmallows.
- Slice and enjoy!
