No-Bake Vanilla Pumpkin Cheesecake Bars

Chill Time: 4 hours or overnight
Total Time: 4.5 hours

Ingredients

For the Crust:
  • 1 ½ cups graham cracker crumbs
  • 6 tbsp unsalted butter, melted
  • 2 tbsp brown sugar
  • ½ tsp ground cinnamon (optional)
For the Filling:
For the Topping (Optional):
  • Whipped cream 
  • Cinnamon, crushed pecans, candied nuts, or caramel drizzle

Directions

Prepare the Crust:
  1. In a bowl, mix graham cracker crumbs, brown sugar, cinnamon, and melted
    butter.
  2. Press firmly into the bottom of a parchment-lined 8x8 or 9x9 pan.
  3. Chill in the fridge while you make the filling.
Make the Filling:
  1. In a large bowl, beat cream cheese until smooth.
  2. Add sugar, pumpkin purée, Amoretti®Natural Pumpkin Spice Artisan Flavor, cinnamon, ginger, nutmeg, and Amoretti Vanilla Bean Paste. Mix until fully incorporated.
  3. Gently fold in the whipped topping until light and fluffy.
Assemble & Chill:
  1. Spread the filling evenly over the prepared crust.
    Smooth the top and refrigerate for at least 4 hours, or overnight, until fully set.
  2. Finish & Serve:
  3. Top with whipped cream.
  4. Slice into bars and garnish with pecans or other desired toppings.
Tips:
  1. For a firmer texture, freeze for 30 minutes before slicing.
