No Bake Pistachio Pie Cups

Ingredients
Graham Cracker Crust
- 3 tbsp. melted unsalted butter
- 1 1/4 cup graham cracker crumbs
- 1/2 tsp. Amoretti® Vanilla Bean Paste
- Pinch of salt
Pistachio Filling
- 1/4 cup heavy cream
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 tsp. Amoretti® Vanilla Bean Paste
- 1/2 cup Amoretti® Pistachio Creme Praline White Chocolate Spread
Whipped Cream
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 tsp. Amoretti® Vanilla Bean Paste
Other
- 4 single-serve dessert cups
- Chopped pistachios, for garnish
Directions
Graham Cracker Crust
- Add graham cracker crumbs, butter, vanilla bean paste, and salt in a medium bowl.
- Mix until well combined.
- Evenly divide the crust into dessert cups.
- Pack firmly into cups and set aside.
Pistachio Filling
- In a medium bowl use a hand mixer to whip cream until stiff peaks
- In a separate bowl use a hand mixer to mix cream cheese until light and fluffy.
- Add powdered sugar, vanilla bean paste and pistachio creme praline white chocolate spread to cream cheese and mix until well combined.
- Gently fold or mix whipped heavy cream into the cream cheese mixture.
- Evenly divide into dessert cups on top of graham cracker crust and set aside.
Whipped Cream
- Add heavy cream to a medium-sized bowl and use a hand mixer to whip until medium-stiff peaks.
- Add in powdered sugar and vanilla bean paste and mix until well combined.
- Add to dessert cups and use a knife or offset spatula to scrape off excess creating a smooth top surface.
- Sprinkle with chopped pistachio and refrigerate for at least 2 hours before eating.
