No Bake Pistachio Pie Cups

Ingredients

Graham Cracker Crust
Pistachio Filling
Whipped Cream
Other
  • 4 single-serve dessert cups
  • Chopped pistachios, for garnish

Directions

Graham Cracker Crust
  1. Add graham cracker crumbs, butter, vanilla bean paste, and salt in a medium bowl.
  2. Mix until well combined.
  3. Evenly divide the crust into dessert cups.
  4. Pack firmly into cups and set aside.
Pistachio Filling
  1. In a medium bowl use a hand mixer to whip cream until stiff peaks
  2. In a separate bowl use a hand mixer to mix cream cheese until light and fluffy.
  3. Add powdered sugar, vanilla bean paste and pistachio creme praline white chocolate spread to cream cheese and mix until well combined.
  4. Gently fold or mix whipped heavy cream into the cream cheese mixture.
  5. Evenly divide into dessert cups on top of graham cracker crust and set aside.
Whipped Cream
  1. Add heavy cream to a medium-sized bowl and use a hand mixer to whip until medium-stiff peaks.
  2. Add in powdered sugar and vanilla bean paste and mix until well combined.
  3. Add to dessert cups and use a knife or offset spatula to scrape off excess creating a smooth top surface.
  4. Sprinkle with chopped pistachio and refrigerate for at least 2 hours before eating.
