Mango Panna Cotta

Ingredients
Mango Layer
- 1 cup heavy cream
- 1 cup whole milk
- 1/4 cup granulated sugar
- 2.5 tbsp. Amoretti® Natural Mango Artisan Flavor
- 1 tsp. Amoretti® Vanilla Madagascar Bourbon Extract (2x)
- 2 tsp. unflavored gelatin powder
- 2 tbsp. cold water
Cream Layer
- 1/2 cup heavy cream
- 1/4 cup whole milk
- 1 tbsp. granulated sugar
- 1/4 tsp. Amoretti® Vanilla Madagascar Bourbon Extract (2x)
- 3/4 tsp. unflavored gelatin powder
- 1 tbsp. cold water
- toasted pistachios (for garnish)
- diced mango (for garnish)
Directions
Mango Layer
- Combine gelatin powder and cold water in a bowl to bloom for 5-10 minutes.
- In a sauce pan on medium heat combine ingredients and stir constantly until sugar completely dissolves and mixture comes to a gentle simmer (do not boil).
- Add bloomed gelatin to cream mixture and stir until gelatin completely dissolves.
- Pour into serving dishes, allow to cool for about 5-10 minutes then put in the refrigerator to set for about 4 hours.
Cream Layer
- Once the mango layer has set completely, in a separate bowl, combine gelatin powder and cold water in a bowl to bloom for 5-10 minutes.
- In a sauce pan combine ingredients and stir constantly until sugar dissolves and mixture comes to a gentle simmer (do not boil).
- Add bloomed gelatin to cream mixture and mix until gelatin completely dissolves.
- Make sure your mango layer is completely set, then pour mixture into your serving dish on top of the mango layer, allow to cool for about 5-10 minutes and put into refrigerator to set for about 2-4 hours.
- Once your cream layer is completely set, garnish with some chopped pistachios and diced mangos.
