A soft and chewy cookie filled with sweet white chocolate is the perfect platform for a zesty and bright key lime frosting! These Key Lime White Chocolate Cookie Bars are easy to make and will surely leave your taste buds asking for more. Double the recipe for a tray of cookie bars fit for a party.
Ingredients
COOKIE BAR
1/2 cup unsalted butter (room temperature)
1/2 cup granulated sugar
1 egg (room temperature)
1 tsp. Amoretti® Natural Vanilla Bean Artisan Flavor
1.5 cups all-purpose flour
1/2 tsp. baking powder
1/4 tsp salt
1/8 - 1/4 cup white chocolate chips

Directions
COOKIE BAR
With a hand or stand mixer, mix together butter and sugar until well combined, scraping down sides of bowl as needed.
Add the egg and Amoretti® Natural Vanilla Bean Artisan, mix again until combined.
In a separate bowl whisk together flour, baking powder and salt. Slowly mix this into the wet ingredients until combined.
Quickly mix in white chocolate chips and spread dough into a 9 x 9 cake pan.
Bake for 15 - 20 min or until edges begin to turn golden brown
Remove from oven and let cool.
FROSTING
With a hand or stand mixer beat the butter until light and fluffy, about 10 minutes.
Mix in Amoretti® Vanilla Madagascar Bourbon Water Soluble 2X and Amoretti® Natural Key Lime Artisan Flavor until well combined.
Mix in powdered sugar until combined.
ASSEMBLY
Once cookie bar has cooled gently spread frosting on top.
Decorate with sprinkles and enjoy!
