Jam Packed Pancakes in Paradise
For a special occasion, go on a pancake breakfast vacation! We stuffed a basic pancake with coconut, pineapple, and mango for tropical flavor explosion!
Ingredients
BASIC PANCAKE BATTER- 1½ cups all-purpose flour
- 2 tbsp sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1½ cups buttermilk
- 2 eggs
- 1 tsp Amoretti® Madagascar Bourbon Vanilla
- 2 tbsp vegetable oil
- 1 - 20 oz can pineapple tidbits, well drained
- ½ cup flaked unsweetened coconut
- ¼ cup macadamia baking pieces
- 1- 15 oz can cream of coconut
- ½ cup flaked unsweetened coconut
- 1 cup mango, diced
- ½ cup flaked unsweetened coconut, toasted
- ¼ cup macadamia baking pieces
- 1- 15 oz can cream of coconut
- ½ cup Amoretti® Coconut Cream Syrup
- powdered sugar, optional
Directions
BASIC PANCAKE BATTER- Whisk the flour, sugar, baking powder, baking soda, and salt together in a large mixing bowl.
- Combine the buttermilk, eggs, Madagascar Bourbon Vanilla, and oil in a medium bowl.
- Pour the wet ingredients into the dry ingredients and whisk just until combined. Do not over mix.
- Fold the pineapple tidbits and ¼ cup of the macadamia baking pieces into the batter.
- Allow the batter to rest for 10-30 minutes.
- While the batter rests, preheat a griddle and coat it with cooking spray.
- FILLING Combining the cream of coconut, flaked coconut, and diced mango in a medium bowl. Set aside.
- TOPPING Place the toasted coconut, macadamia baking pieces, and Coconut Cream Syrup into a bowl and stir to combine. Set aside.
- Pour 4" circles of pancake batter on the griddle. Allow the batter to cook until bubbles form on the surface of the pancake, break, and leave indentations.
- Spoon a small amount of filling on half of the pancake, making sure to leave a ¼" edge. A little filling goes a long way and it will spread as you fold over the pancake, so don’t overfill it.
- Fold the pancake over the filling with the edges of each side touching and allow it to continue to cook and seal itself, flipping it as needed to keep the browning even. You may put an aluminum pie dish over the pancakes to help them cook through if necessary.
- Place two jam packed pancakes per plate, spoon topping over pancakes and dust with powdered sugar if desired.
- TOASTED COCONUT Place remaining laked coconut in a skillet and toast over medium heat, stirring frequently, until the flakes are golden brown.
