"I Dig You" Pudding - Gluten Free Vegan Cake Treat

The cutest DIY valentine is coming up roses with Amoretti's Wild Strawberry Artisan.  Each of your sweeties are sure to want to "plant one on ya" after harvesting the goodness of this nectarous goody.  

Set up your space with three sweet stations (strawberry cake, chocolate pudding, and whipped cream) to put together an earth-friendly delight for the ones you love.

This dish is prepared Gluten Free/Vegan, but you can swap it for your favorite milk and flour preferences.

Pudding Ingredients
  • Pudding mix
  • Plant based milk
  • 1/2 cup of special dark cocoa powder
Whipped Cream Ingredients

Directions

Cake Directions
  1. In a stand mixer, mix dry ingredients together.
  2. In a separate bowl, mix wet ingredients together (except food coloring)
  3. Mix wet and dry and allow to come together for a minute in your mixer.
  4. add a few drops of your food coloring to your desired color (you'll want it to be a bit darker than your desired outcome as some color will dissipate in the heat of the oven) for me this was 4 drops
  5. Pour on to a sheet pan with parchment paper and cook in a 350° oven for 20 minutes
  6. Remove and allow to cool
  7. Flip sheet over and pull off parchment paper
  8. Cut your cake into cubes
Pudding Directions
  1. Follow directions on package to mix pudding
  2. Add half cup of Dark Cocoa powder
  3. Add two tablespoons of plant based milk for a smooth pudding consistency
Whipped Cream Directions
  1. In a stand mixer, whip plant based cream for a minute or two 

  2.  

    Add your powdered sugar
  3. Add vanilla
  4. Whip for a minute or two until you get stiff peaks
Assembly

Stack layers of pudding, cake and whipped cream (and any extras) to the top of your jar, cover with lid and add a sweet note and spoon.
