How to Flavor Marshmallows with Amoretti Artisans

  1. Line a 9×9 inch baking dish with plastic wrap or parchment paper and spray with non-stick cooking spray. Set aside.
  2. Place 1/2 cup of water in the bowl of an electric mixer fitted with the whisk attachment, and sprinkle gelatin on top of water to soak/bloom.
  3. While the gelatin is blooming, combine the 1/4 cup of water, corn syrup, and sugar in a saucepan. Bring the mixture to a boil over medium heat. Boil hard for 1 minute.
  4. When the mixture reaches 240 F, turn the mixer on the lowest speed and carefully pour the hot sugar mixture into the gelatin mixture. Beat on high for 12 minutes or until the mixture is fluffy and forms stiff peaks. 
  5. Once you achieve the perfect consistency, add the vanilla extract and 2 tbsp of your favorite Amoretti® Artisan Natural Flavor. Mix until combined.
  6. Pour the marshmallow mixture into the prepared baking dish, using a greased spatula to smooth the top. Cover the marshmallows with a piece of greased plastic wrap (if using parchment, sift powdered sugar on top) pressing it down lightly to seal the covering to the top of the candy.
  7. Allow the marshmallows to rest overnight.
  8. Once set, mix together cornstarch and powdered sugar in a shallow dish. Using an oiled kitchen knife or bench sraper (for even cuts), cut the marshmallow candy into strips, then into 1 inch squares. Toss the marshmallows lightly in the cornstarch mixture. Dust off and devour!
  9. Store in an airtight container for up to 3 days.
