How to Flavor Caramels with Amoretti Extracts
Ingredients

1 cup butter

4 cups granulated sugar

2 cups light corn syrup

24 oz. evaporated milk
- Candy thermometer
Directions
- Line and oil a 9x13 with parchment paper
- In a large pot melt together butter and sugar until sugar is disolved. Keep heating until it begins to boil.
- Slowly add in evaporated milk, about 1/8 - 1/4 cup at a time while stirring constantly.
- Once evaporated milk is incorporated continue to stir constantly until your caramel reaches 240 - 245 F (firm ball stage)
- Remove from heat and stir in your desired Amoretti Oil Soluble Extract.
- Pour into your prepared pan and sprinkle with sea salt (if desired)
- Refrigerate until cooled and hardened. Cut, and enjoy!
