Ingredients
- 1 pint heirloom grape or cherry tomatoes, halved
- 3 oz feta cheese, cubed
- ½ cup (about 15) Kalamata or black olives, halved
- 1 small red or sweet onion, thinly sliced
- 1 English cucumber, quartered lengthwise and chopped
- 2 tsp fresh oregano leaves, chopped
- ⅓ cup Amoretti® Organic Extra Virgin Finishing Olive Oil
- lettuce cups (optional) for serving
Directions
- In large bowl, combine tomatoes, olives, onion, cucumber, feta cheese and half the chopped oregano. Toss well.
- Once evenly mixed, add Kalamata Extra Virgin Olive Oil and remaining oregano. Toss to coat.
- Serve in lettuce cups if desired.

So any really good olive oil can be a “finishing” oil, a finishing oil refers to any flavored oil or undiluted olive oil. They are used to give your bread/salad/dipping oils/dressings a hint or an essence of whatever flavor you are using. Using an expensive olive oil that is not flavored will add a peppery flavor, a lemon infused oil will add a lemony flavor, and so on.

This looks and sounds amazing but what is the difference between “finishing” olive oil and regular olive oil?
