Can I substitute vanilla extract for vanilla bean paste?
Yes! While vanilla bean paste adds beautiful depth and those signature vanilla specks, a high-quality vanilla extract works just fine. Just use the same amount. Here's our go-to vanilla extract.
Can these blondies be made gluten-free?
Absolutely. Simply swap the all-purpose flour for your favorite 1:1 gluten-free baking blend. Just be sure it includes xanthan gum for best texture, and keep an eye on baking time since GF blends can bake a little differently.
How should I store leftover blondies and how long will they stay fresh?
These are best stored at room temperature for 2–3 days in an airtight plastic bag or container. After day 3, pop them in the fridge to extend freshness. If they last that long!
Ingredients:
- 1/2 cup butter, melted
- 1 cup granulated sugar
- 1 egg and 1 egg yolk
- 1 teaspoon Amoretti Vanilla Bean Paste
- 2 teaspoons Amoretti Natural Birthday Cake Artisan Flavor
- 1/4 teaspoon baking powder
- 1 cup all purpose flour
- 1/2 teaspoon salt
- 1/4 cup rainbow sprinkles
Directions:
- Preheat the oven to 350°F. Grease or line an 8x8 pan with parchment paper and set aside.
- In a large mixing bowl whisk together the melted butter and sugar. Add the eggs, egg yolk, and vanilla extract, birthday cake flavoring and mix until combined and lighter in color.
- Add the baking powder, salt, and flour. Fold together until just mixed and no clumps of flour remain. Add the sprinkles & fold a few times more. Be sure to not over mix.
- Pour the batter into your prepared pan, spreading into an even layer.
- Bake for 30 minutes or until the blondies are golden brown, set on the edges and have puffed up. The middle will be slightly undercooked. The blondies will continue to cook as they cool! Every oven is different so be sure to keep an eye on the blondies after they hit the 25 minute mark & beyond.
- Once the blondies are cool, cut them into 9 or 16 squares with a sharp knife.
- Serve with ice cream or top with a little bit of vanilla frosting!
