Fruity Monster Gummies
Next week is Halloween and our DIY fruit snacks are ready! Yield depends on mold size.
Ingredients
EYEBALLS FOR MONSTER GUMMIES- ¾ cup apple juice
- 3 - ¼ oz packets gelatin (¾ oz total)
- Amoretti® Snow White W.S. Food Color
- Amoretti® Jet Black W.S. Food Color
- ½ cup + 1 tbsp apple juice
- 3 - ¼ oz packets gelatin (¾ oz total)
- 1 pump Amoretti® Blue Agave Nectar Clear
- 2+ tbsp Amoretti® Blueberry Artisan, see TIPS
- ½ cup + 1 tbsp apple juice
- 3 - ¼ oz packets gelatin (¾ oz total)
- 3 tbsp Amoretti® Orange Cream Artisan
- ½ cup + 2 tbsp apple juice
- 3 - ¼ oz packets gelatin (¾ oz total)
- 2 tbsp Amoretti® Mai Tai Compound
Directions
TO MAKE EYEBALLS FOR THE MONSTERS- Pour apple juice in a small saucepan and whisk in gelatin. Let sit for 5 minutes.
- Turn on medium heat and heat until you can see steam rising from the liquid and gelatin has dissolved, do not boil.
- Remove from heat and divide the gelatin between 2 bowls, about ¾ in one bowl and the remaining ¼ in the second. Let cool about 2 minutes.
- Stir Snow White Food Color into the larger amount until desired color is reached. Stir Jet Black Food Color into the smaller amount until desired color is reached.
- Use an eyedropper to give your monsters black pupils and bow ties. Chill to set.
- Use a dropper to add eyes and teeth to your monsters. Test the gelatin with a knuckle to make sure it isn't warm enough to melt the black gelatin.
- Return to the fridge to set while you prepare flavored gelatin.
- If you prefer opaque gummies, use the remaining white gelatin and add it to your flavored gelatin until your desired hue is reached.
- Place apple juice and Amoretti product in a small saucepan and whisk to emulsify.
- Whisk in gelatin and let sit for 5 minutes.
- Turn on medium heat and heat until you can see steam rising from the liquid and gelatin has dissolved, do not boil.
- Remove from heat and let sit 2 minutes.
- Pour into a squeeze bottle or use a dropper and fill your molds.
- Refrigerate for about an hour before unmolding. Gummies last in the refrigerator for a week.
- Repeat with remaining flavors.
- If you find any flavor a tad more tart than you'd like, simply add 1 pump Blue Agave Nectar Clear directly into the tablespoon and top off with the product of your choice; this combo counts as the first tablespoon in the product amount listed.
- A standard packet of unflavored gelatin is ¼ oz.
