Fruit Pizza

If you're looking for a dessert that's as beautiful as it is easy to make, this Fruit Pizza recipe is your new best friend! It’s colorful, fresh, and perfect for everything from summer get-togethers to lazy weekend baking projects.

The base is a shortbread cookie crust, on top is a white chocolate cream cheese frosting enhanced by our Amoretti® Vanilla Bean Paste. Once that's on it's time to get creative! Slice up your favorite fruit and arrange them however you like—neat rows, a rainbow swirl, or something totally freestyle. There’s no right or wrong way to do it, and that’s kind of the fun! To finish it off, we poured over a light glaze made with our Amoretti® Natural Passion Fruit Artisan!

This is one of those desserts that looks impressive but is actually super low-stress to make. It’s light, refreshing, and easy to customize with whatever fruit you have on hand. Whether you’re hosting brunch or just want something sweet and summery, this fruit pizza hits the spot.

Ingredients

Shortbread Crust
  • 3/4 Cup Butter (Softened)
  • 1/2 Cup Confectioner Sugar
  • 1 1/2 Cup All Purpose Flour
White Chocolate Cream Cheese Frosting
Fruit Topping
  • 1/4 Cup Sugar
  • 1 Tbs. Cornstarch
  • 1/2 Cup Pineapple Juice
  • 1/2 Tsp. Lemon Juice
  • 1/2 Tbs. Amoretti® Natural Passion fruit Artisan
  • Assorted Fresh Fruit (I used kiwis, mango, strawberries, blueberries, raspberries and blackberries)

Directions

Shortbread Crust
  1. Heat your oven to 300 degrees F. Beat your butter and confectioner sugar until light and fluffy, then mix in your flour.
  2. Press the mixture onto the bottom of a 12 in. round pizza pan. Bake for 20-25 minutes or until lightly browned. Let cool completely. 
White Chocolate Cream Cheese Frosting
  1. In a microwave safe bowl, microwave your white chocolate chips and heavy whipping cream for 1-1 1/2 minutes or until melted and smooth when stirred. Beat in the cream cheese and Amoretti Vanilla® Bean Paste
  2. Spread over your cooled shortbread crust.
Fruit Topping
  1. In a small saucepan, combine your sugar and cornstarch, stir in your pineapple juice, lemon juice and Amoretti® Natural Passion Fruit Artisan
  2. Cook over medium heat stirring constantly until thickened. Allow to cool.
  3. Slice and arrange your fresh fruits on top of the filling, then pour your glaze over top. 
  4. Serve and enjoy!
