Ingredients
Cookies
- 2 1/2 cups all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 3/4 cup unsalted butter
- 1 cup granulated sugar
- 2 egg yolks
- 1.5 tbsp. Amoretti® Eggnog Compound
- 1 tsp. Amoretti® Vanilla Madagascar Bourbon Extract
- 1/2 cup heavy cream
Glaze
- 1 cup powdered sugar
- 2-3 tbsp heavy cream (depending on desired consistency)
- 1/4 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1 tsp Amoretti® Vanilla Madagascar Bourbon Extract
Directions
Cookies
- In a medium mixing bowl, mix together your flour, baking powder, salt, cinnamon and nutmeg, then set aside.
- Cream the butter and sugar with a hand or stand mixer with a paddle attachment making sure to scrape down the bowl. Beat on high until light and fluffy.
- Add in your egg yolks, heavy cream, Amoretti Vanilla Madagascar Bourbon Extract and Amoretti Eggnog Compound mixing on medium, scraping the bowl down and mixing again.
- Add in your dry ingredients and mix on low until just combined, scarep down and mix again for just a few seconds to incorporate everything.
- Use a cookie scoop the dough (or roughly portion out 2 tbsp) and drop them onto a lined baking sheet about 4 inches apart.
- Bake on the center rack at 350 degrees F. for about 11-12 minutes or until the edges are set and the centers of the cookie appears dry.
- Let cool completely.
Glaze
- Mix together powdered sugar, cinnamon and nutmeg, then drizzle your heavy cream and Amoretti Vanilla Madagascar Bourbon Extract,
- Whisk together until completely combined
- Drizzle the icing over the tops of your cooled cookies and allow to dry for about 10-15 minutes.
- Serve and enjoy!
Notes
- You can add as much or as little heavy cream to your icing to reach your desired consistency.
- You can replace the heavy cream in your icing for eggnog for an added touch of festive flavor.
