Eggnog Chai Thumbprint Cookies

Eggnog and chai are an unexpected pair BUT an absolutely delicious one! These easy-to-make thumbprint cookies combine a sweet and creamy eggnog cookie with a robust chai tea white chocolate center.  Using Amoretti's Chai Tea Extract and Eggnog Compound we were able to easily infuse these cookies with these typically hard to achieve flavors!

Cookies
  1. Preheat oven to 350 F and line a sheet pan with parchment paper
  2. Mix together flour, baking soda and salt, set aside.
  3. In a stand mixer or with a hand mixer beat together butter and sugars until light and fluffy.
  4. Mix in egg, Eggnog Compound and Vanilla Extract.
  5. Slowly incorporate in dry ingredients until well mixed.
  6. Place 1 tbsp. dough balls on to parchment paper.
  7. Use the back of a tsp. measuring spoon to make indents in the dough. Coat the measuring spoon with flour to prevent sticking.
  8. Bake for 10-15 minutes. Remove from oven and let cool.
Filling
  1. Melt the chocolate and vegetable shortening in the microwave or double broiler. Mix well.
  2. Add in Chai Extract and spices. Mix until well combined.
  3. Spoon chocolate into the indents on the cookies.
  4. Let cool and enjoy!
