Eggnog Chai Thumbprint Cookies
Ingredients
Cookies
- 2 cups all purpose flour
- ½ tsp. baking powder
- ½ tsp. salt
- 1 cup unsalted butter, softened
- ¼ cup granulated sugar
- ¼ cup dark brown sugar
- 1 egg
- 2 tbsp. Amoretti® Eggnog Compound (5% use level)
- 1 tsp. Amoretti® Vanilla Madagascar Bourbon Water Soluble 2X
Filling
- 200 g white chocolate chips
- 1 tbsp. vegetable shortening
- ½ tsp. Amoretti® Chai “Tea” Extract Oil Soluble (1% use level)
- 1/8 tsp. ground cinnamon
- 1/8 tsp. ground ginger
- 1/8 tsp. ground clove
- 1/8 tsp. ground nutmeg
Directions
Cookies
- Preheat oven to 350 F and line a sheet pan with parchment paper
- Mix together flour, baking soda and salt, set aside.
- In a stand mixer or with a hand mixer beat together butter and sugars until light and fluffy.
- Mix in egg, Eggnog Compound and Vanilla Extract.
- Slowly incorporate in dry ingredients until well mixed.
- Place 1 tbsp. dough balls on to parchment paper.
- Use the back of a tsp. measuring spoon to make indents in the dough. Coat the measuring spoon with flour to prevent sticking.
- Bake for 10-15 minutes. Remove from oven and let cool.
Filling
- Melt the chocolate and vegetable shortening in the microwave or double broiler. Mix well.
- Add in Chai Extract and spices. Mix until well combined.
- Spoon chocolate into the indents on the cookies.
- Let cool and enjoy!
