Pour in Kataifi and toast until lightly brown, stirring regularly.
Transfer to bowl and mix in Roasted Pistachio Cream.
Scoop 1-2 tbsp sized balls and place onto baking sheet.
Refrigerate until ready to use.

Preheat oven to 375 F & line three baking sheets with parchment paper and set aside.
In the bowl of a stand mixer, cream the butter and sugars together until light and fluffy.
While the mixer is running, grab a separate bowl and mix flour, baking soda, baking powder, and salt. Set aside.
Stop the mixer, scrape down the sides, and beat in eggs and vanilla until light (about 1 minute).
Once light, gently pour in the dry ingredients and pulse the machine until the majority of the flour has attached to the wet ingredients. This will prevent the flour from flying everywhere. Once it is somewhat combined, turn the mixer to a normal speed and finish mixing.
Pour in the chocolate chips and mix.
Scoop out 2-3 tablespoons of dough and flatten between palms.
Place one Dubai chocolate ball filling in the center and wrap dough around it.
Place on cookie sheet and repeat with remaining dough and filling.
Bake for 15 -20 minute until just golden brown.
Remove from oven and let cool for 5 minutes before transferring to cooling rack.
