Dubai Chocolate Bar Cookies
Ingredients
Cookies
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup light brown sugar, packed
- 2 tsp. Amoretti® Natural Vanilla Bean Artisan Flavor
- 2 large eggs, room temperature
- 3 Cups all purpose flour
- 1 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp. salt
- 2 cups chocolate chips
Filling
- 1/3 cup unsalted butter
- 8 oz. Kataifi
- 11 oz Amoretti® Pistachio Creme Praline White Chocolate Spread
Directions
Filling
- Line baking sheet with parchment paper.
- Chop Kataifi into small pieces.
- Melt butter in a non-stick pan.
- Pour in Kataifi and toast until lightly brown, stirring regularly.
- Transfer to bowl and mix in Pistachio Creme Praline White Chocolate Spread.
- Scoop 1-2 tbsp sized balls and place onto baking sheet.
- Refrigerate until ready to use.
Cookies
- Preheat oven to 375 F & line three baking sheets with parchment paper and set aside.
- In the bowl of a stand mixer, cream the butter and sugars together until light and fluffy.
- While the mixer is running, grab a separate bowl and mix flour, baking soda, baking powder, and salt. Set aside.
- Stop the mixer, scrape down the sides, and beat in eggs and vanilla until light (about 1 minute).
- Once light, gently pour in the dry ingredients and pulse the machine until the majority of the flour has attached to the wet ingredients. This will prevent the flour from flying everywhere. Once it is somewhat combined, turn the mixer to a normal speed and finish mixing.
- Pour in the chocolate chips and mix.
- Scoop out 2-3 tablespoons of dough and flatten between palms.
- Place one Dubai chocolate ball filling in the center and wrap dough around it.
- Place on cookie sheet and repeat with remaining dough and filling.
- Bake for 15 -20 minute until just golden brown.
- Remove from oven and let cool for 5 minutes before transferring to cooling rack.
- Enjoy while still warm.
