Ingredients
Cupcakes
- 2 eggs
- 1 cup granulated sugar
- 1/2 cup softened butter
- 1 tsp. Amoretti® Creme De Menthe Extract
- 3 tbs. Amoretti® Madagascar Bourbon Vanilla Ice Cream Compound
- 1 1/2 cup all purpose flour
- 1 1/2 baking powder
- 1/8 tsp. salt
- 1/2 cup milk
Buttercream
- 1 cup softened butter
- 3 1/2 cups powdered sugar
- 1 tsp. milk
- 1 tsp Amoretti® Creme De Menthe Extract
- 1/2 tsp. Amoretti® Natural Green Food Coloring
Directions
Cupcakes
- Line a muffin tin with cupcake liners and preheat your oven to 350 degrees F.
- Using a hand or stand mixer, cream together your eggs and sugar until combined and then add in your softened butter, Amoretti® Creme De Menthe Extract and Amoretti® Madagascar Bourbon Vanilla Ice Cream Compound and mix until completely combined.
- In a seperate bowl, mix together your flour, baking powder and salt.
- Alternating with the milk, add the dry ingredients to the egg mixture in 3 increments. Mix until just incorporated.
- Scoop the batter into your lined cupcake tin filling each one up to about 2/3 of the way full. Bake for 17-20 minutes.
- Once done, let sit for 2 minutes and then remove cupcakes from the tin and set aside to cool.
Buttercream
- Using a hand or stand mixer, beat the softened butter until smooth and creamy.
- Add in your powdered sugar 1 cup at a time and mix on low until completely combined.
- Add in your Amoretti® Creme De Menthe Extract and milk then mix until combined.
- Seperate half of the frosting and put it into a piping bag then set aside.
- Add the Amoretti® Natural Green Food Coloring to the half of the frosting still in the bowl and mix until combined, then add that half into a different piping bag.
- To create the swirl effect, place a piece of plastic wrap on your counter and pipe a line of each alternating between the two colors onto the plastic wrap until you run out of frosting.
- Roll the plastic wrap up and seal the ends. Cut one of your sealed ends and place it into a large piping bag with your perfered piping tip.
- Pipe the frosting on to your cupcakes.
