This bread combines the warm gooey flavor of cinnamon bun with a soft and delicate bread, the perfect palette to spread with butter. Recipe yields 3 loaves

Ingredients

  • 1.5 cups milk
  • 1 cup warm water (115 - 120 F)
  • 5 tsp. active dry yeast
  • 1 tsp granulated sugar
  • 3 tsp Amoretti® Natural Cinnamon Bun Extract Water Soluble
  • 3 eggs
  • .5 cups granulated sugar
  • 1 tsp. sea salt
  • .5 cups unsalted softened butter
  • 8 cups all purpose flour
  • 2 tbsp. milk
  • 1 cup brown sugar
  • 2-3 tbsp. melted butter

Directions

  1. Warm your 1.5 cups milk in sauce pan or microwave until it you just start to see steam rising from it. Remove from heat and set aside.
  2. Heat 1 cup of water to 115 - 120 F (do not go past 120 F to ensure you do burn your yeast). Dissolve 1 tsp. granulated sugar into the water and then mix in your yeast. Let the yeast activate until fluffy (about 10-15 minutes)
  3. While your yeast is activating mix together Cinnamon Bun Extract, Eggs, sugar, salt, cooled milk and butter in a large bowl. Once yeast is ready add to the mixture.
  4. Slowly start to mix in flour until a stiff dough forms. Knead the dough on a lightly floured surface and then form a ball. Place dough ball into a large buttered bowl and turn to grease the dough ball.
  5. Cover bowl with a warm damp towel and let rise until it has doubled in size. This may take about 1-3 hours depending on the temperature of your home.
  6. Lightly flour your work surface and roll out your dough into a large 1/2 inch thick rectangle.
  7. Brush the surface of the dough with 2 tbsp. of milk.
  8. Sprinkle the brown sugar evenly over the dough leaving about 1/4 inch of space on the perimeter.
  9. Carefully roll your dough up tight the long way.
  10. Slice into thirds. pinch the ends and bottom together.
  11. Place into greased 9 x 5 loaf pans and lightly grease the tops.
  12. Let rise a second time, uncovered. (about an 1-2 hours)
  13. Preheat oven to 350 F and once dough has finished rising bake for 45 min - 1 hour or until tops are golden brown.
  14. Let cool on rack for about 30 min and then brush tops 2-3 tbsp. melted butter.
  15. Let rest another 30 min before removing from pan. Slice and enjoy once cooled!
