Caramel Apple Pie Cheesecake Bars

Ingredients

16 oz. cream cheese

1.5 cups heavy cream

1 tbsp. powdered gelatin

1/4 cup cold water

1 cup granulated sugar

1/4 tsp salt

2 cups melted white chocolate chips

1 tsp. Caramel Extract Oil Soluble

1/2 cup melted butterscotch chips
- 1 tsp vegetable or coconut oil
Directions
- Bloom your gelatin by placing it in a microwave safe bowl with cold water, stir and let sit for about 10 minutes while you prep the filling.
- Using a hand or stand mixer, whip the heavy cream until soft peaks form then set aside.
- In a bowl using a hand or stand mixer, beat cream cheese, salt and half your sugar until completely smooth and no lumps are visible, then add the other half of the sugar.
- Warm your gelatin mixture in the microwave for about 10-15 seconds until it becomes clear and fluid then slowly pour into your cheesecake mixture and stir until fully incorporated.
- Now in thirds, slowly add the whipped cream mixing in between until fully incorporated. Mixture should be smooth and fluffy.
- Pour into your preferred mold and freeze for at least 8 hours (or overnight)
- Once your cheesecake has set in the freezer, melt your white chocolate in the microwave in bursts of 15 seconds until completely melted, then add your caramel oil soluble extract and mix.
- Pour your chocolate over the top of your cheese cake and use an offset spatula to smooth it out.
- Melt your butterscotch chips in the microwave with your oil of choice in bursts of 15 seconds until completely melted, then put into a piping bag and drizzle over the top of your cheesecake bars.
- Serve and enjoy!
