  1. In a medium mixing bowl, mix together your flour, baking powder and salt then set aside.
  2. Cream the butter and sugar with a hand or stand mixer with a paddle attachment making sure to scrape down the bowl. Beat on high until light and fluffy.
  3. Add in your egg yolks, heavy cream, Amoretti Natural Tart Apple Artisan Flavor and Amoretti Vanilla Bean Paste, mix on medium, scraping the bowl down and mixing again.
  4. Add in your dry ingredients and mix on low until just combined, scrape down and mix again for just a few seconds to incorporate everything.
  5. Pour in toffee bits and mix one final time.
  6. Use a cookie scoop the dough (or roughly portion out 2 tbsp) and drop them onto a lined baking sheet about 4 inches apart.
  7. Bake on the center rack at 350 degrees F. for about 11-12 minutes or until the edges are set and the centers of the cookie appears dry.
  8. Let cool completely.
  9. Melt caramel with in microwave with heavy cream.
  10. Use a fork to drizzle over cookies.
  11. Let cool for 10 minutes and enjoy!
