Directions

Cupcakes
  1. Line a cupcake/muffin tin with 12 cupcake liners and preheat oven to 350 degrees F.
  2. In a bowl using a stand or hand mixer, beat almond paste and sugar at medium speed until crumbly.
  3. Add butter and mix until smooth.
  4. Add eggs one at a time and beat until well creamed. 
  5. Add rum and almond extract.
  6. Mix dry ingredients together in a separate bowl, then add to the butter mixture and mix at a slow speed until combined (make sure not to overmix, this will cause your cupcake tops to sink)
  7. Fill cupcake tin 3/4's full. Bake for 20-25 minutes or until golden. The tops should spring back when lightly pressed.
  8. Let cool for a few minutes in the tin, then finish cooling on a wire rack. 
Frosting
  1. Beat the cream cheese and butter together
  2. Add the Maraschino Cherry Artisan and slowly add in the powdered sugar.
  3. Mix until completely combined and there are no lumps in the frosting. 
Assembly
  1. Once the cupcakes have cooled completely, add your cream cheese frosting to a piping bag.
  2. Pipe the frosting on using your preferred tip and piping method.
  3. Top with a maraschino cherry to garnish.
  4. Enjoy!
