Rosemary Quiche
Start the day with this creamy, comforting breakfast with the savory flavor of rosemary!
Ingredients
CRUST- 1¼ cups all purpose flour
- ¼ tsp salt
- 7 tbsp cold butter, cubed
- 2 tbsp ice water
- 6 oz (4-5 strips) bacon
- 2 eggs
- 2 egg yolks
- 1¼ cups half and half
- ¼ tsp salt
- ¼ tsp white pepper
- pinch nutmeg
- 1 tsp Amoretti® Rosemary Oil Extract O.S.
- 1 cup shredded Gruyère cheese
Directions
CRUST- Combine all dry ingredients and cut in butter until pea sized.
- Add ice water and mix until dough forms.
- Flatten into a disc shape, wrap and chill 1 hour.
- Press chilled dough into fluted tart pan with removable bottom.
- Fill with parchment and pie weights (or beans).
- Par bake at 375°F for about 15 minutes.
- Remove the parchment and pie weights and continue baking for another 10 minutes until tart shell is lightly browned.
- Cool completely.
- Fry bacon, drain on paper towels and dice.
- Combine eggs, yolks, half and half, salt, pepper, nutmeg and Rosemary Oil Extract.
- Spread diced bacon on bottom of cooled tart shell.
- Pour egg mixture over the bacon and top with grated Gruyère cheese.
- Bake in a 375°F oven for 30-35 minutes.
- Serve warm, or let cool to room temperature, cover and chill.
