Healthful Dinner
Meatloaf, mashed potatoes, and green beans; they're staples for a reason. What more could you want? We're glad you asked, because we've made this entire meal lower in fat and carbohydrates than the traditional preparations.
Ingredients
MEATLOAF- 1 onion, diced
- 1 bell pepper, diced
- 2 celery stalks, diced
- 2 tbsp light olive oil
- 1 cup tomato sauce, plus extra for serving
- ½ tsp Amoretti® Garlic Oil Extract O.S.
- ½ tsp Amoretti® Oregano Oil Extract O.S.
- 1 egg
- ¼ cup egg substitute
- 1 lb 90% lean ground beef
- 1 lb ground turkey breast
- 1 cup old fashioned oats
- 2 lbs new potatoes
- ¼ cup grated Parmigiano Reggiano or Pecorino Romano cheese
- 2 tsp minced garlic
- 2 tbsp Amoretti® Organic Extra Virgin Finishing Olive Oil
- 2 tbsp vegetable broth
- salt and pepper, to taste
- 1 lb fresh green beans, trimmed
- 1 tsp Amoretti® Butter Extract O.S.
- 1 tbsp dry white wine
- 1½ tsp Amoretti® Vanilla Madagascar Bourbon W.S. 2X
- ½ tsp granulated onion
- salt and pepper, to taste
- ¼ cup sliced almonds

Directions
MEATLOAF- Preheat oven to 375°F.
- Sauté the onion, bell pepper, and celery in olive oil until the onions are translucent.
- Add the tomato sauce and Garlic Oil and Oregano Oil Extracts. Simmer on low heat for 30 minutes and allow to cool.
- Whisk the egg and egg substitute in a large bowl.
- Add the ground beef, ground turkey breast, and oats to the egg and mix thoroughly.
- Add the sauce and combine with the meat mixture.
- Pat the mixture into a loaf pan. Invert the loaf pan into a broiler pan and remove the loaf pan.
- Bake the meatloaf for 45 minutes to 1 hour, until the center reaches 165°F.
- Place the potatoes in a large pot and add enough water to cover them by 2 inches.
- Boil the potatoes for about 15 minutes, until a paring knife inserted into a potato meets no resistance.
- Drain the potatoes, then squeeze them through a potato ricer into a bowl, discarding the skins.
- Add the garlic, Parmigiano or Romano cheese, Finishing Olive Oil and broth to the potatoes and stir until combined.
- Season with salt and pepper to taste.
- In medium saucepan, cook green beans in boiling water over medium-high heat for 7-8 minutes or until crisp-tender. Drain and shock in an ice bath to stop the cooking process.
- Combine the wine, Butter Extract, Madagascar Bourbon Vanilla, and granulated onion in a serving bowl, add the hot green beans and toss to coat well.
- Season with salt and pepper to taste.
- Toast the sliced almonds in a dry non-stick skillet until fragrant. Sprinkle the toasted almonds over the green beans.
- Serves 8. One serving is 1 slice meatloaf with 2 tbsp tomato sauce, ½ cup mashed potatoes, and 4oz green beans.
