Cotton Candy Popcorn
If you are looking for a fun and delicious snack to eat during your next movie night, this is the recipe for you! Candied popcorn isn't only good for movie nights though, you can make it for a host/hostess gift, bring it to a party to impress your friends or to wow your kids during snack time! In this recipe, we will be using our delicious Cotton Candy Extract, but you can exchange that for whatever Amoretti Extract your heart desires. Some flavors I tried and loved are; Wild Strawberry, Orange Cream, Cookies and Cream, and Cola! You can even get creative and mix and match with 2 different flavors, with this recipe, the sky's the limit!
Ingredients
Popcorn
- 1/2 cup popcorn kernels
- 1/4 cup vegetable oil (or your oil of choice for popping popcorn)
Blue Candy
- 2 tbsp. unsalted butter
- 2 tbsp. light corn syrup
- 1 tbsp. water
- 1/2 cup granulated sugar
- 1/8 tsp baking soda
- 1/2 tsp Amoretti® Cotton Candy Extract
- 1/4 tsp blue food coloring
Pink Candy
- 2 tbsp. unsalted butter
- 2 tbsp. light corn syrup
- 1 tbsp. water
- 1/2 cup granulated sugar
- 1/8 tsp baking soda
- 1/2 tsp Amoretti® Cotton Candy Extract
- 1/4 tsp pink food coloring
Directions
Popcorn
- Warm your oil of choice in a medium/large pot over medium high heat, test your oil with 3 kernels of popcorn, when all 3 pop, scoop them out and your oil is ready.
- Put your popcorn in the oil, and cover.
- Remove your pot from heat when the popping starts to slow down (when there is 3-5 seconds in between pops).
- Pour popcorn out evenly between 2 baking sheets lined with silicone baking mats and set aside.
Blue Candy
- Melt your butter in a small sauce pan over medium heat, once melted add in corn syrup, water then stir until combined.
- Add in your sugar making sure none of it sticks to the sides of the pan (this will cause your whole batch to crystalize)
- Bring to a boil and add the baking soda once your mixture gets frothy. Then bring up to 235-245 degrees F using a candy thermometer.
- Add in your Cotton Candy Extract and blue food coloring, then remove from heat.
- Pour the mixture over one of the baking sheets of popcorn and gently stir.
Pink Candy
- Melt your butter in a small sauce pan over medium heat, once melted add in corn syrup, water then stir until combined.
- Add in your sugar making sure none of it sticks to the sides of the pan (this will cause your whole batch to crystalize)
- Bring to a boil and add the baking soda once your mixture gets frothy. Then bring up to 235-245 degrees F using a candy thermometer.
- Add in your Cotton Candy Extract and pink food coloring, then remove from heat.
- Pour the mixture over the other baking sheet of popcorn and gently stir.
- Allow both sheets of candied popcorn to set and cool for about 20-30 minutes.
- Mix both colors of candied popcorn in a large bowl then serve and enjoy!
