"Chewy" Oatmeal Cookie - For May the Fourth - Vegan / Gluten Free

This cookie is packed with flavor and texture, with the perfect combination of coconutty goodness, maple syrup, and sunflower butter. Ingredients

  • 1 cup old-fashioned, rolled oats
  • 3 Tbs gf flour
  • 2 Tbs ground flax meal
  • 1 cup of coconut shreds (unsweetened)
  • 1 ½ tsp ground cinnamon
  • ¼ tsp salt
  • 3 Tbs sugar (or sugar substitute) 
  • 2 tablespoons vegan butter
  • ¼ cup unsalted, natural creamy sunflower butter
  • 3 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 tsp of Amoretti Burnt Sugar Extract
  • ½ cup vegan chocolate chips

Directions

  1. Preheat oven to 350°F. Line a baking sheet with parchment. Set aside.
  2. In your mixer whisk together all of the dry ingredients.
  3. Add in your wet ingredients.
  4. Blend well 
  5. Blend in chocolate chips 
  6. Using a small or medium cookie scoop, scoop and drop cookie dough balls onto the prepared baking sheet—spaced evenly apart.
  7. Flatten cookies to desired thickness. The cookies will crumble at the edges a bit after flattening—use your fingers to squish the edges back together.
  8. Bake for 9 - 11 minutes.
  9. Place baking sheet on a cooling rack, allowing cookies to firm up for about 15 minutes.
  10. Enjoy!
